Braised Chicken & Dates - a hint of Morocco
- cinnamon, paprika, lemons, honey, dates, onion.
I added two other spices - cumin and coriander.
Served with red skin mashed potatoes, Brussel sprouts, and beets.
I really enjoyed the contrast in tastes:
sweet from the beets and dates, tang from the lemon,
and a slight bitter edge from the Brussel sprouts.
That, of course, was all smoothed out by butter!

Rack of lamb smeared with rosemary, whole grain mustard,
red wine vinegar topping - done in the Big Easy!
Cut baby taters and pieces of sweet potato were at the bottom
to "catch the drippings"...Mmm...M! Good

The lightest naan yet - with Kathy McDonald's recipe which included mashed potatoes.
VERY good! Naan for dessert tonight ;-)
It's soft, stretchy, and crispy bits...
I picked up some Heat and Eat Tadka Dal at Walmart last week,
so I am all set for tomorrow's lunch!

Salmon in foil with lemongrass, ginger, green onion, cilantro, hot chili peppers, lime slices.
Served with nasi lemak and sauteed Shanghai bak choy drizzled with sesame oil.
Perfect for a chilly October evening (0C!), and the oven warmed the kitchen nicely :-)

This was the "burnt layer" at the bottom of the non-electric rice pot.
It's toasted and infused with coconut milk, turmeric, white peppercorns.
I heated it up a little more, threw in some hot water,
and let it simmer until the hard bits were softened.
In Chinese - fan jiu - the perfect dessert!

Such a pretty squash from Ken and Fay Daniels.
I hated to cut into it and cook it, but it had to be done.
This is something new for me - stuffed squash.
It has a hard "shell" and I've IDed it as a Sweet Dumpling,  SO pretty...
Top was cut off, seeds taken out, then roasted at 375 for 30 minutes.
Filling was ground beef with a southwest flavour, cooked separately.
When the squash was roasted, the cavity was filled with the ground beef mixture,
topped with Kraft taco cheese, baked in 350F for 15 minutes.
Delicious AND pretty!

Spices included cumin, hot chili powder, coriander.
Diced red peppers, onion, garlic, cilantro, tomato,
and chunky salsa were cooked with the ground beef.
It needed black beans for the southwest "attitude" but my cupboard was bare...
Canned mixed beans filled in. All good!

I also got a vegetable marrow,
so it was split into two, roasted, stuffed, and baked along with the pretty squash.
Vegetable marrow is variety of squash.
When roasted, the inside is soft and yummy.
The skin remains hard - serves well as a bowl.
Not much flavour, so it's best as a vessel for stuffing.

Yeem Goak Gai (Chinese salty chicken) done in TBE!
Perfect skin.
Sides: wild rice pilaf, green beans sauteed in the chicken drippings,
and chopped ginger and cilantro dipping sauce
(made with the salt, 5 Spice powder, and the drippings).
 Sauteed the green beans in the drippings, and made the ginger dip with drippings too!

Braised lamb shanks with Middle Eastern Spices.
Stir-fried bell peppers, zuchini, radishes, green onion,
and steamed rice with sprinkle of jeera.
Delicious and fall-of-the-bone tender.

Cranberry Apple Chutney for Thanksgiving turkey:
fresh cranberries, chopped apple, orange, pecans, OJ, sugar, apple cider vinegar...
Excellent! It's the best cranberry "sauce" ever! Great on toast, ice-cream...
It will keep a couple of weeks in the fridge, but you can freeze it.

Gotta keep little fingers off... breaking off "burnt bits"!?

When I said "no leftovers in the fridge", I really meant it!
So, Bill and I had our Hillman Family style Mac'n'Cheese with Creamed Salmon
(with mushrooms, kernel corn, and fresh green peppercorns).
Jazzed up the Mac'n'Cheese with some Kraft Shredded Taco / Nacho Cheese
and crushed red chili peppers.
Fine supper for a chilly fall evening.
Daughter China calls this the "Ultimate Comfort Food" from her childhood days :-)

Big Easy chicken with roasted sweet mini-bell peppers and cauliflower.

Using up leftover Big Easy chicken -
made a quick curry with mixed vegetables (and grapes?!)
and served it over the chicken.
